Recipe: Harissa
You'll need this harissa recipe for the merguez sausage dish above.
Ingredients
- 3/4 cup olive oil
- 2 garlic cloves, minced
- 1 teaspoon ground caraway
- 1 cup mild chili powder
- 1 tablespoon ground coriander
- 1 teaspoon salt
- 2 tablespoons chopped mint
Preparation
Heat the oil in a small sauté pan over medium heat. When the oil shimmers, add garlic and sauté until golden, about 4 minutes.
Remove the pan from the heat. Add the caraway, chili powder, coriander, salt and mint and stir to combine. Let cool.
Tips
Store in an airtight container in the refrigerator for up to 2 weeks.
