In 2004, 8-year-old Alexandra “Alex” Scott passed away from neuroblastoma. But while bravely battling her cancer at age 4, Alex revealed her dream to start a lemonade stand to raise money to help find cures for childhood cancer. She raised $2,000 that year.
After she passed away, her family continued her inspiring legacy through Alex's Lemonade Stand Foundation. The foundation has raised $25 million for cancer research thus far, some of it from lemonade stands run by other children.
Liz Scott, Alex’s mother, has raised additional funds to fight cancer by auctioning off her famous lemon cookies. This year, the cookies raised $13,000 on the eve of what would have been Alex’s 13th birthday.
INGREDIENTS
1. Mix all of the ingredients together.
2. Form the dough into balls and roll in powdered sugar.
3. Place on lightly greased cookie sheet.
4. Bake at 350 degrees for 10 minutes or until lightly browned. Be careful not to overbake.
You can refrigerate the dough to make it easier to form into balls and roll in powdered sugar.
