Recipe: Sunday brunch grilled cheese sandwich
Ingredients
- For toast
- 2 slices 2-day old challah (1/2 inch slice)
- french toast batter
- 1 teaspoon butter
- 1 ounce shredded Comté cheese
- 1 slice high quality smoked ham
- 2 teaspoons chevré
- 2 teaspoons Blue Chair Fruit Company's Early Girl Tomato Jam
- powdered sugar
- fresh raspberries
- bourbon butter sauce (recipe below)
- For bourbon butter sauce
- 1 cup brown sugar
- 1/2 cup salted butter
- 1/2 cup heavy cream
- 2 tablespoons bourbon
- 1/2 teaspoon cinnamon
- For french toast batter (enough for 5 sandwiches)
- 1 egg
- 2 tablespoons melted salted butter
- 3/4 cup milk
- 1 teaspoon vanilla
- 1 tablespoon sugar
- 3 tablespoon flour (the flour will give the french toast a bit more of a 'crust' when cooked, so it doesn't get soggy)
Preparation
For bourbon butter sauce:
Melt sugar and butter in a small saucepan over medium heat, whisking until melted and combined. Add remaining ingredients and whisk until smooth. Allow to come to a low boil for about 5 minutes or until slightly thickened and reduced to about 1.5 cups. Can be made 2 days in advance.
For french toast batter:
Whisk egg lightly, then whisk in melted butter, then milk. Add remaining ingredients and blend well.
For each sandwich:
Heat a heavy nonstick pan over medium heat. Add the butter and swirl to coat the pan. Dip the challah in the french toast batter and allow excess to drip off; place both slices in pan. When browned on one side, flip both pieces over. On one slice, layer comte, ham and then sprinkle chevre on top. Place second slice of french toast on top, browned side down. When second side of bottom slice is browned, flip sandwich over and finish browning. Remove the sandwich to a warmed plate.
Top sandwich with tomato jam, sprinkle with powdered sugar and top with 2-3 fresh raspberries and drizzle with bourbon sauce.
Serve immediately, preferably with a fresh pomegranate mimosa and a few good friends.
