For years we’ve been told eating foods high in carbohydrates will make us fat, bloated and sluggish, but a new book called “The Carb Lovers Diet” claims certain carbs can help you lose up to 100 pounds and never feel hungry.

Recipe: Mediterranean pasta salad

Ingredients
  • 1 cup uncooked multigrain farfalle (bow-tie pasta)
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 1 (14-ounce) can artichoke hearts packed in water, drained and chopped
  • 1 cup fresh part-skim mozzarella cheese, cubed
  • 1/4 cup chopped bottled roasted red bell pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 cup frozen peas
Preparation

Cook pasta according to package instructions, omitting salt and fat.

While pasta cooks, combine zest and juice of 1 lemon and 2 teaspoons olive oil in a large bowl; stir well with a whisk. Add artichoke hearts, cheese, bell pepper and parsley; toss to combine.

Place the peas in a colander; when the pasta is cooked, drain pasta over peas. Shake well to drain, but do not run under cold water. Add the pasta and peas to the artichoke mixture, and toss well until thoroughly combined. Serve warm or at room temperature.

Recipe: Grilled burger and three-bean salad

Ingredients
  • 6 ounces lean ground sirloin or bison
  • 1 teaspoon olive oil
  • 1/2 cup green beans, fresh or frozen, thawed
  • 1/2 cup canned white beans, rinsed and drained
  • 1/2 cup canned kidney beans, rinsed and drained
  • 1/2 cup carrots, peeled and chopped
  • 1/2 cup chopped green bell pepper
  • 2 whole grain hamburger buns
  • 2 tablespoons low fat Italian vinaigrette
  • Romaine lettuce leaves
  • 4 tomato slices
Preparation

Divide beef into 2 equal portions, shaping each into a 1/2-inch-thick patty.

Heat oil in a non-stick skillet over medium heat. Place patties in pan; cook 6 minutes each side or until a meat thermometer inserted into middle of burger reads 160 degrees.

Combine green beans, white beans, kidney beans, carrots, bell pepper and vinaigrette in a bowl; toss gently.

On the bottom of each bun, place a few lettuce leaves and 2 slices of tomato; top with burger and other half of bun.

Serving

Serve bean salad alongside burgers.

Recipe: Blueberry oat pancakes with maple yogurt

Ingredients
  • Cooking spray
  • 1 cup old-fashioned rolled oats
  • 1/2 cup low fat cottage cheese
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 3/4 cup plain low fat Greek yogurt
  • 1 tablespoon maple syrup
Preparation

Combine oats, cottage cheese, eggs and vanilla in a blender or food processor. Process the ingredients until smooth. Gently stir in the blueberries.

Heat the large non-stick skillet over medium heat. Coat pan with cooking spray. Spoon about 2 tablespoons of batter per pancake into pan. Cook 3 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over and cook 3 more minutes or until golden.

Combine yogurt and maple syrup. Serve alongside pancakes.
