Indian-style Cauliflower with Peas

INGREDIENTS
• 1 tablespoon neutral oil, like corn or canola
• 1 small red onion, peeled and chopped
• 1 large head cauliflower, trimmed and separated into florets
• Salt and pepper
• 2 teaspoons garam masala or curry powder
• Pinch cayenne
• 1 cup fresh peas, or more
• 1/4 cup cilantro leaves, chopped
• 1 tablespoon lime juice, or to taste
DIRECTIONS
Put the oil in a non-stick skillet and turn the heat to medium-high. A minute later, add half the onion and the cauliflower. Add the garam masala and season with salt, black and cayenne pepper. Cook, stirring or tossing, until the onion has caramelized and the florets are lightly browned, about 3 to 5 minutes.
Add the peas and cook another 2 or 3 minutes, stirring – until they've lost their rawness. Add the cilantro and raw onion, toss once, and serve, with the lime juice.
